Hi
What you have there is also more popularly called Cou-Cou and Stewed Fish.
Looks ok. Cant say what “Accent” is though, but I figure it is some flavoring sauce like Worchestire.
One thing, you cannot put the fish with the other ingredients at the same time. It will break up.
Heat a tablespoon oil
add the onions and tomato
fry until the onions are tender
then add the other ingredients
let cook slowly for about 10 mins
then add the fish
let gently steam for 5 – 10 mins
Make sure that you season the fish before
Trini Cook, Authentic Caribbean Recipes
This dish might be called cou-cou in Trinidad, but it is definately called fungi and boiled fish in St. Thomas. Another wonderful Caribbean variation.
